Market Lane: Brazil special

Welcome back to Market Lane! A Drop favourite and a staple of the Melbourne coffee scene. On chatting with the team at Market Lane about doing this feature, we had something particular in mind. We wanted to highlight Brazil coffee, which is often predicated to the inclusion in blends. Instead, this drop we are featuring three Brazil single origins to showcase the quality that can shine through in this region. Flavour notes - Milk chocolate & orange with a soft caramel finish. 

 

"It was with great excitement that our Brazil coffee buyer Toshi embarked on his trip to the South American country last year. For one thing, this was the first buying trip anyone from Market Lane had been on since early 2020. For another, Brazil is a meaningful place for Toshi - as a child, he spent six years living there with his family, during which time he fell in love with the food and culture. In the years since, his love of the country has extended into a passion for its coffee and an investment in the meaningful relationships he's built with the people who produce the coffees we share.

Fabiano Borré is one of those producers. We've offered his coffees every year since 2015. Toshi spent time with Fabiano last September, catching up, learning about the changes he'd made on the farm in the preceding years, and tasting his new-season coffees. "Sincora is a small and special lot," Toshi says of this selection. It's an easy-drinking coffee, and it's sweet, clean and delicious."

Flavour notes - Milk chocolate with hazelnut and golden syrup. 

 

"This coffee was grown and naturally processed by Silvio Leite, one of the most knowledgeable and talented coffee professionals we know. As a mentor to many and a co-founder of the Cup of Excellence, Silvio has played a pivotal role in shaping the international specialty coffee industry.

Silvio has helped us source beautiful Brazilian coffees for many years, and for the last two years we’ve been lucky enough to buy coffee directly from him! It had long been his goal to establish his own coffee farm and, in 2019, he finally purchased 30 hectares in the famous Piatã growing region."

Flavour notes - Milk chocolate with plum and a vanilla finish.

Aeropress

Ratio - 1:13.5 (dry coffee : water)

Bloom - 30 seconds

Brew time - 90 seconds (including bloom)

Press consistently over 15-20 seconds.
