Welcome to Phew Coffee! A brand that is close to my heart because, well, I’m one of the owners!

We started Phew in September 2020 to go along with our new cafe Plenty Eatery in Pennant Hills. We now run it at both our stores; Plenty Eatery & Harvest Specialty Coffee. Phew was a way for us to explore moving up the supply chain while trying to create a really great product.

As a cafe, there are generally a lot of restrictions that come with using a particular brand of coffee. Having our own brand of coffee allows us a lot of freedom on what we can do and who we can collaborate with. This is important to us as it allows us to collaborate with a lot of the great roasters you’ve experienced on drop & sell them alongside Phew.

Usually at Phew we only have the one Seasonal blend running. However, for this drop we’ve created a second blend & roasted a couple of singles. We would love you feedback on these coffees as we’re always looking to improve. :)

We received some great feedback on the Market lane from a few drops ago. Over the next 3 months, drop is going to be exclusively featuring coffees from outside of Sydney. Definitely something to look forward too!

More and more we find ourselves gravitating to coffee's like Los Rosales. Easy drinking, well balanced coffees with a bit of really satisfying acidity. The kind of coffee you could drink for days straight. In the cup this one has a bit of tart acidity, a mellow sweetness and a chocolately finish.

Whoa. When we cupped this our minds were blown. It's probably the most complex and interesting Honduran we've ever had - it's vibrant, viscous, syrupy and super sweet. We tasted things like apricot, chamomile, pineapple jam, caramelised banana, toffee & liquorice root, and had to hold ourselves back from coming up with more. Get involved if you want something different.

Espresso - 9 bar

Brew ratio - 1:2.3 (dry coffee : espresso liquid)

Temp - 94 Deg C

Time - 25-30 seconds.

*Adjust grind size to achieve the desired time

Brew ratio - 1:2.7 (dry coffee : espresso liquid)

Temp - 94 Deg C

Time - 25-30 seconds.

*Adjust grind size to achieve the desired time

 

Pourover

Temp - off the boil

Ratio - 1:15.5 (dry coffee:water)

Bloom - 30 seconds

Flow rate - fast

*Adjust grind size to achieve desired flow rate

Aeropress

Temp - off the boil

Ratio - 1:14 (dry coffee : water)

Bloom - 30 seconds

Brew time - 90 seconds (including bloom)

Press consistently over 15-20 seconds.

 

Stove top

Ratio - 1-13.5 (dry coffee : water)
